Russian Caramel

Description

Yum!!

Ingredients

  • 395 g condensed milk
  • 120 g butter or margarine1
  • 1 c sugar
  • 1 tsp vanilla extract

Instructions

Place condensed milk, butter and sugar in a casserole dish (I found amicrowave rice cooker is a good size).  Microwave on HIGH for 2.5 minutes.  Stir.  Repeat 4 times, for 12.5 minutes cooking total.  Add vanilla and beat until well-combined.  Pour into greased and lined tray.  (They recommended square 20cm by 20cm, but whatever you have will work.)  Cut when a little cooler.

 

Notes

Be careful, it gets extremely hot, and take care when adding the vanilla.  Definitely not one to do with little ones around, as it splatters a bit too.  But well worth it!

I didn't set or keep in the fridge, and I left some for DH when I took the girls to Canberra last Thursday (made on Wed) and there was still some left, and it was okay on Monday.  Not quite as good, but still yummy :)

Alright having a big sook

Alright having a big sook now... after the 3rd 2.5 minute thingy (so 7.5 mins total) it separated and went all chunky... I assume that isn't meant to happen?

 

Guessing my microwave is too strong to do this on high...

 

So if I were to do it in a saucepan what consistency am I looking for before adding the vanilla and allowing it to cool?

 

Shattered... my house smells yummy but there is nothing to eat!!! LOL.

So do you keep it in the fridge? Or set it in the fridge?

 

Assuming I don't eat it all today myself (quite possible ROFL) how long should it keep for?
